Woven in our genes … this is how we can describe the sense of the food. We have always believed that honoring traditions and habits, especially our own – the Bulgarian, is a matter of pride. Our nation is hospitable, responsible, good-hearted and joyful, why not proud as well. Our feasts and traditions reach everywhere in the world. We prove that our culture, lifestyle and sense of food can contribute to making the world a better place, and why not a more delicious place.
We are determined to use the whole variety of raw materials that Bulgaria has given to us. The main directions of taste that are so typical of the traditional Bulgarian cuisine are the fine clover, the greengages, the sorrel and the aromatic hibiscus, which are a bright example of the sour taste on our tongue. The pleasant feeling of walnut kernel and donkey thistle are part of the culprits of bitterness. Bulgarian carrot, contrary to expectations, is not a variety of carrots, but the only Bulgarian species of hot peppers known worldwide, which in combination with turnip will pleasantly spice up the palate. We have left the best for the ending – sweet-scented rose, honey and violet are permanently settled for a sweeter and logical end of the day.
